Easy Vegan Burger Recipe with Brown Rice and Flaxseed Binder

Want to try a delicious and easy vegan burger? Then nothing better than this homemade brown rice and flaxseed veggie burger, perfect for grilling and sure to please!

Ingredients:

1 cup cooked short-grain brown rice

1 cup chopped mushrooms (shiitake or portobello)

1/2 cup cooked black beans

1/4 cup chopped walnuts

1/4 cup finely chopped onion

1 tablespoon ground flaxseed plus 3 tablespoons water (let sit to form a "flax egg")

1/3 cup breadcrumbs or ground oats

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon olive oil (for cooking)

Instructions:

Sauté onions and mushrooms in a pan until soft.

In a large bowl, mash black beans.

Add cooked rice, sautéed mushrooms and onions, chopped walnuts, spices, and flax egg. Mix well.

Add breadcrumbs or oats to hold the mixture together. If too wet, more breadcrumbs can be added.

Shape into patties.

Heat oil in a pan over medium heat. Cook patties for about 5 minutes on each side, or until browned.

 

Serve on whole-grain buns with your favorite toppings, such as lettuce, tomato, and vegan mayo. 

Tips: 

Let the patties chill in the fridge for 30 minutes so that they stay together better during cooking.

Bake patties at 350°F (175°C) for 20 minutes, flipping halfway through.

For a gluten-free option, choose gluten-free oats rather than breadcrumbs.
