Quick Easy Gobi Kheer Recipe for a Unique Eid Dessert | Food Fantasy

What is Gobi Kheer?

Gobi Kheer or Cauliflower Kheer undoubtedly sounds very strange, but it is a very tasty and healthy dessert. In the North Indian tradition, celebrity chef Ranveer Brar once revealed that cauliflower's mild flavor and soft texture offer unusual possibilities in Indian sweets with the right cooking procedure.

 

Ingredients (Serves 4):

1 cup finely grated cauliflower (use only the white florets)

1 liter of full-fat milk

4 tbsp sugar (adjust to taste)

4-5 cardamom pods (crushed)

2 tbsp condensed milk (optional for extra richness)

1 tbsp ghee (clarified butter)
 

Chopped almonds, pistachios & saffron strands (for garnish)
 

How to Make Gobi Kheer:

Wash and blanch the grated gobi in hot water for a good 3-4 minutes. Drain it well.

Heat a pan of ghee. Stir-fry the gobi until the raw smell disappears and it becomes tender.

Add milk and simmer it over low heat for 15-20 minutes, stirring now and then.

Mix in the sugar, cardamom, and condensed milk. Allow it to cook down to a thick consistency.

Garnish it with nuts and saffron. Serve it warm or chill it.
