Miyeok Muchim (Seaweed Salad)

This vinegary, sweet seaweed salad is a refreshing summer side dish! Miyeok, also known as wakame, is an edible brown sea vegetable that is highly nutritional. Muchim means mixed with seasonings.

Ingredients

1 ounce dried miyeok 

1 small kirby cucumber

2 red radishes 

1 teaspoon sesame seeds

Dressing

4 tablespoons vinegar

1-1/2 tablespoons sugar

1/2 teaspoon minced garlic

1/2 teaspoon salt

1 teaspoon soy sauce

Directions

1.Soak the dried miyeok in cold water per package instructions or until it turns soft and plump. 

2.Rinse a couple of times to remove any hidden sand. Drain well and cut into bite sizes. 

3.Blanch the miyeok in boiling water and then put immediately in cold water, bring it to cool. Drain the water completely.

4.Cut the miyeok into bite size pieces.

5.Mix all the dressing ingredients in a bowl well until the sugar has dissolved.

6.Add the miyeok, cucumber, and radish & toss well to combine everything.

7.Serve Cold.
