Indian food is rich in bold spices and full of flavors, but most of its dishes are full of carbohydrates. The good part: one can dine on tasty Indian food without loading up on rice or bread! I think low-carb doesn't equate to low-flavor.

Paneer Bhurji with Lettuce Wraps
Why it’s great: Paneer is high in protein and has almost no carbs. Using lettuce as a wrap keeps it light.
Ingredients:
1 cup crumbled paneer
1 chopped onion
1 chopped tomato
1 green chili (optional)
1 tsp ghee
Lettuce leaves for wraps
Spices: turmeric, cumin, salt
Cauliflower Rice Pulao
Why it’s great: Cauliflower is a low-carb veggie that mimics rice texture.
Ingredients:
2 cups grated cauliflower
1 chopped carrot
½ cup green peas
1 tsp mustard seeds
Curry leaves, ginger
Spices: turmeric, salt, pepper
Keto Baingan Bharta
Why it’s great: Eggplant is low in carbs and full of fiber.
Ingredients:
1 large roasted eggplant
1 chopped onion
1 tomato
1 tsp mustard oil
Garlic, green chili
Spices: cumin, salt, red chili powder
In a nutshell: Use ghee or coconut oil for cooking. Avoid wheat rotis; instead, either go for almond flour rotis or just eat them!
Keeping low-carb in India becomes easy, provided one sticks to local fresh produce. Flavor does not go with the carbs, do!
